Oil interceptor sizing

The purpose of a grease interceptor is to trap and store the suspended grease from the water passing through it. They are usually connected to kitchen sinks , floor drains, and any other plumbing fixtures in restaurants, hotels and institutions that discharge grease laden waste water. A correctly sized grease interceptor reduces maintenance costs for restaurants and prevents the chance of a messy and costly overflow. When it comes to sizing grease interceptors , many plumbing codes focus on either flow rate or liquid volume.


This sizing tool is to provide a product(s) recommendation based on two factors: Maximum flow rate - Calculated based on each of the sink compartment dimensions and the number of additional fixtures (i.e. mop sink, hand sink, pre-rinse sink, etc.) connected to the grease interceptor.

To determine the right sizing , you need to limit the number of fixtures connected to the grease trap. Fixtures connected to the trap may include mop sinks , pot sinks , 3-compartment sinks , and dishwashers. Zurn oil interceptors are designed similar to the grease interceptors.


Both work on the principle that oils are lighter than water and thus gravity causes the oil to rise and the water to fall. The interceptor shall have an interior baffle for full separation of the interceptor into two sections. The outlet pipe shall be the same size as the inlet, the minimum being three inches, and the baffle shall have two openings of the same diameter as the outlet pipe and at the same invert as the outlet pipe.


Determine the flow rate for each sink to be serviced by the grease trap using the same calculations as a single sink.

Add together 1 of the largest flow rate, of the second largest, and of all others. The result is the recommended flow rate (in GPM) of the grease trap. After selecting the interceptor size and type, the correct size of interceptor is based on the flow into it based on rainfall onto a given surface area, this is known as nominal size or NS.
